These hams, in addition, are hickory smoked in our smokehouse using an old-fashioned wood stove, giving each ham a characteristic brown appearance and a rich, hickory smoked flavor. The average age of our hickory smoked hams is nine to ten months, with an average weight of 16 lbs per whole ham. Hams can be ordered whole, packaged in brown paper and a cotton sack, or deboned, sliced, and vacuum-sealed with the bones and shank wrapped in paper.
